Peanut Butter Stuffed Brownie Cookie Cups

Did you know you can cook some pretty tasty things from the dollar stores? This is one of my favorites — Peanut Butter Stuffed Brownie Cookie Cups.

These wonderful treats are layers of chocolate chip cookie dough, then brownie batter, and finally stuffed on top with a peanut butter cup. They are positively scrumptious!

What do you need to make Peanut Butter Stuffed Brownie Cookie Cups?

You can find all the supplies you need to make these delicious treats at the Dollar Tree, Family Dollar, and Dollar General.

You’ll need a package of chocolate chip cookie dough mix. Family Dollar and Dollar General have the regular size package mixes. If you can find the refrigerated cookie dough, that works great and is faster since you don’t need to mix it up. However, the Dollar Tree sells a dry mix that makes 12 cookies that works perfectly.

For the cookie mixes, you’ll need water and softened butter.

You’ll also need a package of brownie mix, and Dollar Tree usually has an 8 x 8 pan size, and the other dollar stores have the regular brownie mix sizes – either will work.

In addition, you’ll need oil and an egg for the brownie mix.

Lastly, you’ll need Reese’s Peanut Butter Cups. All the dollar stores sell a package of 5 of the snack size for about a $1. You’ll need 12 total peanut butter cups, so I usually buy 3 packages. You can also use the Reese’s Peanut Butter Cups that have Reese’s Pieces in them. Those are super good with this, and come in 5 packs as well for the snack size.

Lastly, you’ll need a muffin tin. I have found I prefer to make these in cupcake liners as it can be a little challenging to get them out of the muffin tin when you don’t use cupcake liners.

How do you make Peanut Butter Stuffed Brownie Cookie Cups?

If you’re going to use cupcake liners, you don’t need to grease a 12-count muffin tin. If not, then make sure to liberally grease it with non-stick oil spray.

If using refrigerated cookie dough, use one square of cookie dough in each muffin tin and smush it to cover the bottom of the tin.

If you’re using the cookie mix, follow the directions and mix it up. Then, wrap it in plastic wrap or wax paper and put it in the fridge for an hour before putting about a tablespoon of cookie dough in the bottom of each muffin tin and smush it. I’ve made these millions of times, and when you use warm cookie dough instead of chilled, it just doesn’t come out right.

Next, mix up the brownie mix and add about a tablespoon to the top of each cookie dough.

Place 1 peanut butter cup in on top and gently push down. It’s okay if brownie batter covers it up. It’s also okay if it still sticks out of the brownie batter, too.

Bake for 15-17 minutes. When the brownie tops look done, remove from oven.

Allow to cool for 10-15 minutes before removing from the tins carefully.
